I purchased an X-E1 in 07/2015 for $250 and sold it for $200 in 12/2015. My second X-E1 was purchased in 07/2016 for $220. Today the camera still sells for $200+ on eBay. Unlike Canon EOS cameras, it seems Fujifilm never manufactured enough X cameras so the supply is always < demand. I don't see many camera dealers selling Fuji X cameras. For Canon nearly every camera store is selling.
I remember in 12/2015 someone was selling some refurbished X10 cameras for $99 on eBay. Today X10 is being sold for nearly $200.
I like Fuji X cameras but because of their unstable prices I would rather switch to Canon or Sony.

i don't really see the fuji prices as unstable...their lenses are great so why would they go down much? and the bodies remain pretty consistent...an xe1 took pretty great images and still does...
Why would varying pricing enter in to anything?
The used market is set by supply and demand, and individual condition...this goes for every brand.

Hmmm... I would see your buying/selling experience as showing that x-E1 prices are remarkably stable, rather than unstable.
I reckon that many other brands would probably have given you a considerably greater loss (in percentage terms).

I don't understand why used pricing variability would affect what system a person would choose...

Huh? You only have to buy it once and use it.
