Arista II = Agfa APX
Arista Edu = Fortepan
Arista Edu Ultra = Fomapan

There were also rebranded Ilford films, I think they were called Arista D and Arista Pro. As for paper it's a bit more complicated, I don't have a list there.

I think it varied based on which film, and also over time...

Arista Edu = Fortepan
Arista Edu Ultra = Fomapan

I can vouch for these two.

Also, most of the time, you can tell by the country of origin listed on the box. Either it says so on the product photo, or it says so in the text itself. Freestyle might not say "This is actually relabeled Fomapan," but if it says it was made in the Czech Republic, guess what? Fomapan.

if I'm not mistaken, isn't

Arista Edu Ultra = Fomapan = Ultrafine

also? Disaster_Area, are you aware of anywhere that sells Arista Edu/Fortepan in Canada? I wanted to order some from Freestyle, but after their absurd shipping prices, I'd end up paying double. For that price, I may as well stick to my regular stock of HP5.
